Hey Howdy Hey: Aaron, Kristin & Damion

Sending out a big Hey Howdy Hey of thanks to Aaron, Kristin, and Damion Birkholz.

This July will be their sixth year in ownership of Coyote Coffee. Before they took it over it belonged to Jay and Heather Terman. Aaron and Kristin had both worked for Heather and when she had passed away, her husband Jay had offered them a chance to carry on Heather's business. They accepted and they wanted to carry on her business without changing the way she did things.

They did add a few things to their menu. Healthier alternatives energy drinks like Zipfizz and Lotus. Plus, they do ice cream in the summer.

Now during the "stay at home" order, they have not had much traveling business and they cut their hours, but they have been open for their local customers who have been incredibly supportive. Aaron and Kristin both stay busy with other things that they do. Kristin makes a lot of shirts for various people and organizations, including the Ambulance and the Fire Dept. She even made me a couple shirts. One says, "Lincoln kids are awesome" and the other says "Meatball" which was a name one of my favorite little gals at the school decided to name me. So, I had a shirt made, thanks to Kristin.

Four years ago, Kristin had started another little project called "The Rock Group" where she would paint rocks with positive sayings on them like "We rise by lifting others", "Throw kindness like Confetti", "Never give up", "Find your fire" and so on. Also painted on them were holiday themes, cartoon characters, funny sayings, anything to bring a smile. Hundreds of these rocks have been painted. They are randomly put all over, mostly outside of businesses. Kristin said it is fun when people find the rocks and post them from all over the U.S. Brandy Thomas is doing the painting of the rocks now.

Aaron is also busy helping work the coffee shop, plus he is the President of the Lincoln Volunteer Ambulance and has been for more than five years. He has been on an ambulance crew for more than 16 years. He has also been on the Lincoln Volunteer Fire Department for 21 years. He's the chairman of the Lincoln School board, in his second term. He has been chairman now for three years.

Kristin is also a trustee of the Lincoln Volunteer Fire Dept and the Vice President of the PTSO. Their son Damion is a sophomore this year at Lincoln High School and is keeping his family's hardworking tradition going by helping at the shop and by working at the D & D Foodtown.
