Coyote Coffee expands offerings

Coyote Coffee recently expanded their offerings to include baked goods, including some gluten free items.

"We get asked all the time if we have pastries or breakfast sandwiches," said owner Kristin Birkholz, "so we started carrying those. We do quite a big variety of muffin tops and bagels. And then we have some breakfast sandwiches and breakfast cookies, and then we have some gluten free options."

The items come prepackaged from Seattle's Favorite.

"With my food license, everything that I sell food-wise has to be individually wrapped," said Birkholz. "We do toast the bagels and microwave the breakfast sandwiches."

The food has proven to be a successful expansion for the business, Birkholz said.

"It's been a way better response than we ever thought we were going to get. I was having people come just for food," Birkholz said. They've also tossed around the idea of adding additional options during the summer when the stand is open later.

Birkholz also recently started custom designing and making epoxy tumblers which she sells under the name KB's Creations. She said she originally picked it up as a hobby.

"There was a sale at Michael's, and I was thinking I should do one. I enjoyed making them more than I thought I would, and people were interested in wanting them more than I thought they would. Now I have a room especially for these tumblers," said Birkholz, adding that her husband Aaron built a seven cup turner to expand how many she could work on at a time.

"I got a lot of interest in them at Christmas. Kind of overwhelming interest, but I got them all done," she said,

Birkholz, who has started Easter orders already, said she's self-taught and has relied on YouTube tutorials and others to learn.

"I'm not going to say I haven't messed up a few of them. I had to do a lot of research on the safest epoxy to use, and I only use the highest grade. I learned you can't skimp. It's really exciting to try a different style of tumbler, like wood grain,' she said. 'when I did my first one, I was so excited, so everyone in my family got one. I just did a tie-dye one the other day, and it's really cool."

While most of her orders are local, Birkholz has shipped tumblers as far away as Texas. In addition to tumblers, she does other custom work, like t-shirts, keychains and beer koozies.
